Sometimes a cookie or yummy dessert is just what we need to comfort ourselves when we are in a difficult moment or struggling in some way. One or even two cookies is fine. One piece of dessert is great. We just don’t want to eat the whole batch of cookies or pan of dessert.

I'm not a huge sweet eater, my go-to comfort food is usually chips and queso or guacamole. But I do love a warm, rich chocolate chip cookie or a creamy, coffee flavored dessert.

I've adapted my mom's toll house cookie recipe to meet my gluten free needs.

My favorite dessert is tiramisu but I've had to "just say no" since adopting a gluten free diet. This year I found a recipe that used a sponge cake as the base rather than lady finger cookies. It’s delicious and yummy and hits all the right notes.

I adapted the sponge to gluten free. It turned out fantastic
